This Crockpot Spicy Queso Beef Chili combines hearty flavors with creamy queso, perfect for family dinners and gatherings.

- 1 lb ground beef
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) diced tomatoes with green chilies
- 1 can (10 oz) diced tomatoes with green chilies and spices
- 1 cup beef broth
- 1 packet chili seasoning
- 8 oz cream cheese
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 jalapeño, diced (optional, for extra spice)
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef over medium heat until fully cooked and drain the excess fat.
- Transfer the cooked beef to the crockpot and add the black beans, kidney beans, diced tomatoes, beef broth, and chili seasoning. Stir well to combine.
- Cut the cream cheese into cubes and add it to the mixture without stirring. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the shredded cheese until it melts. Adjust seasoning with salt and pepper, and add diced jalapeño if desired. Serve hot with additional toppings.
Notes
For a thicker chili, mash some of the beans before adding. Adjust seasoning to taste before serving for the best flavor.
