- 1 pound boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup chicken broth
- 1 cup heavy cream
- 1 bell pepper, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 ounces pasta (penne or rotini)
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Chopped parsley for garnish
Instructions
- Place the chicken breasts in the crock pot and sprinkle them generously with Cajun seasoning.
- In a separate bowl, mix together the cream of mushroom soup, chicken broth, heavy cream, diced bell pepper, chopped onion, and minced garlic.
- Pour this creamy mixture over the chicken in the crock pot.
- Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours.
- Once the chicken is cooked, carefully remove it and shred it with two forks. Return shredded chicken back to the crock pot.
- Cook the pasta separately according to package instructions. Stir the cooked pasta into the creamy chicken mixture and add salt and pepper to taste.
Notes
To thicken the sauce, consider increasing the cream or using cornstarch. Feel free to add vegetables for extra nutrition.
