Description

Delicious, crunchy zucchini fries that are a healthier alternative to traditional fries.


Ingredients

Scale
  • 2 medium zucchinis, sliced into fry-shaped pieces
  • 1 cup breadcrumbs (or panko for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil for spraying

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each zucchini piece in the egg mixture, then coat with the breadcrumb mixture.
  5. Place coated zucchini on a baking sheet lined with parchment paper.
  6. Lightly spray or drizzle with olive oil.
  7. Bake for 20-25 minutes, turning halfway through, until golden brown and crispy.
  8. Serve warm with a dipping sauce of your choice.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crispiness.
