Ingredients

- 2 medium zucchinis, sliced into fry-shaped pieces
- 1 cup breadcrumbs (or panko for extra crunch)
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Olive oil for spraying
Instructions
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each zucchini piece in the egg mixture, then coat with the breadcrumb mixture.
- Place coated zucchini on a baking sheet lined with parchment paper.
- Lightly spray or drizzle with olive oil.
- Bake for 20-25 minutes, turning halfway through, until golden brown and crispy.
- Serve warm with a dipping sauce of your choice.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crispiness.
