- 1 pound dried black-eyed peas
- 6 cups water or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 ham hock or smoked sausage (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Fresh parsley, for garnish
Instructions
- Rinse and sort the black-eyed peas, then soak them in water for at least 4 hours or overnight. Drain before cooking.
- In an Instant Pot, set to sauté and heat the olive oil. Add the chopped onion and garlic, cooking until they turn translucent and fragrant.
- Add the soaked black-eyed peas, water or broth, ham hock or sausage, salt, pepper, and smoked paprika to the pot. Stir well to combine.
- Close the lid and cook on high pressure for 20 minutes. Allow for a natural pressure release.
- Stir in the heavy cream and adjust seasoning if necessary. If using the stovetop method, bring the mixture to a boil, then reduce heat and simmer for about 1-1.5 hours until peas are tender.
- Serve garnished with fresh parsley.
Notes
For a vegan option, omit the meat and use vegetable broth and coconut milk or dairy-free creamer.
