Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, sauté the chopped onion and minced garlic over medium heat until they soften and become fragrant, about 5 minutes.
- Add the diced potatoes and chicken or vegetable broth to the pot. Bring to a boil, then reduce heat and let it simmer for about 20 minutes until the potatoes are tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a standard blender in batches.
- Stir in the heavy cream and season with salt and pepper. Heat through for an additional 5 minutes.
- Serve hot, garnished with chopped cilantro.
Notes
For extra flavor, add a pinch of cumin or smoked paprika. Substitute heavy cream with coconut milk for a dairy-free version.
