Description

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic over medium heat until they soften and become fragrant, about 5 minutes.
  2. Add the diced potatoes and chicken or vegetable broth to the pot. Bring to a boil, then reduce heat and let it simmer for about 20 minutes until the potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a standard blender in batches.
  4. Stir in the heavy cream and season with salt and pepper. Heat through for an additional 5 minutes.
  5. Serve hot, garnished with chopped cilantro.

Notes

For extra flavor, add a pinch of cumin or smoked paprika. Substitute heavy cream with coconut milk for a dairy-free version.
