Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté for 5 to 7 minutes, until softened.
  2. Add the diced potatoes and pour in the chicken broth. Bring to a rapid boil.
  3. Reduce to a gentle simmer and cook for 15 to 20 minutes, until the potatoes are tender.
  4. Stir in the shredded chicken, heavy cream, thyme, salt, and pepper. Cook for an additional 5 minutes, then serve hot.

Notes
