- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 cup heavy cream
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté for 5 to 7 minutes, until softened.
- Add the diced potatoes and pour in the chicken broth. Bring to a rapid boil.
- Reduce to a gentle simmer and cook for 15 to 20 minutes, until the potatoes are tender.
- Stir in the shredded chicken, heavy cream, thyme, salt, and pepper. Cook for an additional 5 minutes, then serve hot.
Notes
Serve with crusty bread for dipping. Can store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
