- 1 lb chicken breast
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 package taco seasoning
- 8 oz cream cheese, cubed
- 4 cups chicken broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Optional toppings: cilantro, sour cream, avocado
Instructions
- In a large pot, cook the chicken breasts over medium heat until fully cooked, about 15-20 minutes. Remove from heat and shred the chicken.
- Add the shredded chicken back into the pot along with black beans, corn, diced tomatoes, and chicken broth. Stir well to combine.
- Stir in taco seasoning and bring the mixture to a simmer over medium heat for about 10 minutes.
- Add cream cheese to the pot, stirring until melted and well combined. Season with salt and pepper to taste. Serve hot, garnished with shredded cheese and optional toppings.
Notes
For added flavor, sauté onions and garlic before adding chicken. Can be made vegetarian by substituting chicken with chickpeas or additional beans.
