  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup white chocolate chips, melted
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup cranberry juice
  • 1 cup pomegranate juice
  • 1/2 cup fresh cranberries
  • 1/2 cup pomegranate arils

Instructions

  1. Preheat your oven to 325°F (160°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press this mixture firmly into the bottom of a springform pan to create a solid crust.
  2. In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the melted white chocolate, sugar, and vanilla extract, mixing until well blended. Then, add the eggs one at a time, ensuring thorough mixing after each addition to achieve a creamy consistency.
  3. In a small saucepan, combine the cranberry juice and pomegranate juice. Bring to a simmer and reduce the liquid by half. Once reduced, stir in the fresh cranberries and pomegranate arils, allowing the mixture to cool slightly.
  4. Pour the cream cheese mixture over the prepared crust in the springform pan. Carefully swirl in the cranberry-pomegranate mixture using a knife or skewer for a marbled effect. Bake in the preheated oven for 55-60 minutes, or until the center is set and the edges are lightly golden. Once baked, let the cheesecake cool at room temperature, then refrigerate for at least 4 hours before serving.

Serve chilled, optionally topped with whipped cream or extra pomegranate arils. Store leftovers tightly covered in the fridge for up to 5 days or freeze for up to 2 months.
