- 1 ½ cups graham cracker crumbs
- ½ cup sugar
- ½ cup butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries
- 1 tablespoon orange zest
- ¼ cup orange juice
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, ½ cup sugar, and melted butter until combined, then press into the bottom of the springform pan.
- Beat the cream cheese until smooth in a large bowl, then add 1 cup sugar and mix well.
- Add eggs one at a time, mixing well after each, then stir in the vanilla extract, orange zest, and orange juice.
- Gently fold in fresh cranberries.
- Pour the cream cheese mixture over the crust and spread evenly.
- Bake for 60-70 minutes until the edges are set and the center jiggles slightly.
- Turn off the oven and let the cheesecake cool in the oven for an hour.
- Remove from the oven and cool to room temperature; refrigerate for at least 4 hours or overnight before serving.
Notes
Garnish with extra cranberries and orange zest before serving. Store leftovers in the refrigerator for up to 5 days.
