Delightful bars that combine sweet and tangy flavors of dried cranberries with creamy white chocolate and cream cheese frosting, perfect for holiday gatherings.

- 225 g salted butter, softened
- 350 g brown sugar, packed
- 2 large eggs, at room temperature
- 5 ml vanilla extract
- 240 g all-purpose flour
- 5 g baking powder
- 1 g salt
- 180 g dried cranberries
- 100 g white chocolate, chopped
- 100 g cream cheese, softened
- 50 g powdered sugar
- 5 ml milk
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Cream together the softened butter and brown sugar until smooth.
- Beat in the eggs and vanilla extract until fully combined.
- In another bowl, mix together the flour, baking powder, and salt. Gradually add this to the wet mixture and stir until combined.
- Fold in the dried cranberries and chopped white chocolate.
- Pour the batter into the prepared baking pan and bake for 20-25 minutes or until a toothpick comes out clean. Let cool in the pan.
- For the frosting, beat the cream cheese with the powdered sugar and milk until smooth.
- Once the bars have cooled, spread the frosting over the top and cut into squares to serve.
Notes
These bars store well; keep in an airtight container at room temperature for up to 3 days or refrigerate for a week. Freeze individual bars for up to 3 months.
