Description

Cottage Cheese Egg Bites are a deliciously healthy option for breakfast or a snack, packed with protein and flavor.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • Salt and pepper to taste
  • Non-stick cooking spray or oil

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with non-stick spray or oil.
  2. In a medium bowl, whisk together the cottage cheese and eggs until well combined.
  3. Stir in the shredded cheese, diced bell peppers, chopped spinach, salt, and pepper until evenly mixed.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes or until the egg bites are set and lightly golden.
  5. Allow to cool slightly before removing from the tin. Serve warm and enjoy!
