- 4 cups broccoli florets
- 4 cups vegetable broth

Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion becomes translucent, about 3-4 minutes.
- Add the broccoli florets and shredded carrots, stirring for a few minutes until softened.
- Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for about 10 minutes until the broccoli is tender.
- Use an immersion blender to puree the mixture to your desired consistency. Stir in the heavy cream and shredded cheddar cheese until melted. Season with salt and pepper before serving.
Notes
