Instructions
- Preheat your oven to 350°F (175°C). Prepare your baking sheet by lining it with parchment paper.
- Cream together the cookie butter, granulated sugar, and brown sugar until smooth and fluffy.
- Add the softened butter to the sugar mixture and blend until smooth. Beat in the egg and vanilla extract until well combined.
- Whisk together the all-purpose flour, baking soda, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until edges turn golden brown. Allow to cool slightly on the baking sheet before transferring to a wire rack.
