Instructions
- Begin by heating vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and onion turns translucent, about 3-5 minutes.
- Add the beef cubes to the pot and cook until browned on all sides, stirring occasionally.
- Sprinkle the curry powder over the browned beef and stir well to coat. Pour in the coconut milk and add the chopped bell pepper. Bring to a gentle simmer.
- Cover and let it cook for 1 to 1.5 hours, allowing the beef to tenderize beautifully. Season with salt and pepper, and garnish with fresh cilantro before serving.

For a richer flavor, let the curry simmer longer. You can substitute beef with chicken or tofu for variation.
