  • 2 tbsp curry powder

  • 1 bell pepper, chopped
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Begin by heating vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and onion turns translucent, about 3-5 minutes.
  2. Add the beef cubes to the pot and cook until browned on all sides, stirring occasionally.
  3. Sprinkle the curry powder over the browned beef and stir well to coat. Pour in the coconut milk and add the chopped bell pepper. Bring to a gentle simmer.
  4. Cover and let it cook for 1 to 1.5 hours, allowing the beef to tenderize beautifully. Season with salt and pepper, and garnish with fresh cilantro before serving.
