A delightful combination of flavors, with tender beef simmered in coconut milk and aromatic spices.

- 2 lbs beef chuck, cut into chunks
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup beef broth
- Salt and pepper to taste
- Cilantro for garnish
Instructions
- In a large pot, heat some oil over medium-high heat. Season the beef chunks with salt and pepper, and then brown them on all sides.
- Remove the beef and set it aside. In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until softened and fragrant, about 5 minutes.
- Stir in the curry powder, fish sauce, and brown sugar, cooking for another minute.
- Return the browned beef to the pot. Pour in the coconut milk and beef broth. Bring to a gentle simmer, cover, and cook on low for 2-3 hours until the beef is fork-tender.
Notes
Serve over jasmine rice or alongside warm naan. Garnish with fresh cilantro.
