Description

A delightful combination of flavors, with tender beef simmered in coconut milk and aromatic spices.


Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup beef broth
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium-high heat. Season the beef chunks with salt and pepper, and then brown them on all sides.
  2. Remove the beef and set it aside. In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until softened and fragrant, about 5 minutes.
  3. Stir in the curry powder, fish sauce, and brown sugar, cooking for another minute.
  4. Return the browned beef to the pot. Pour in the coconut milk and beef broth. Bring to a gentle simmer, cover, and cook on low for 2-3 hours until the beef is fork-tender.

Notes

Serve over jasmine rice or alongside warm naan. Garnish with fresh cilantro.
