- 1.5 lbs boneless skinless chicken thighs
- 1 cup orzo pasta
- 1 can diced tomatoes (14.5 oz)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup fresh spinach
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Place chicken thighs in the crockpot as the hearty base for your dish.
- Add diced tomatoes, chicken broth, heavy cream, minced garlic, Italian seasoning, salt, and pepper. Stir to combine all the ingredients well.
- Cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the orzo and fresh spinach. Once the orzo is cooked through, stir in the parmesan cheese and serve warm.
