Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup orzo pasta
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place chicken thighs in the crockpot as the hearty base for your dish.
  2. Add diced tomatoes, chicken broth, heavy cream, minced garlic, Italian seasoning, salt, and pepper. Stir to combine all the ingredients well.
  3. Cook on low for 6-7 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in the orzo and fresh spinach. Once the orzo is cooked through, stir in the parmesan cheese and serve warm.
