Ingredients

  • 1 prime rib roast (about 57 pounds)
  • Kosher salt
  • Freshly ground black pepper
  • 46 cloves of garlic, minced
  • Fresh rosemary, chopped
  • Fresh thyme, chopped
  • Olive oil
  • Beef broth (optional)

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Let the prime rib sit at room temperature for about 1 hour.
  3. Mix garlic, rosemary, thyme, olive oil, salt, and pepper to create a herb paste.
  4. Rub the herb paste all over the prime rib, coating thoroughly.
  5. Place the prime rib fat-side up in a roasting pan and roast for about 20-25 minutes.
  6. Reduce the temperature to 325°F (163°C) and roast for another 1.5 to 2 hours.
  7. Remove from oven and let it rest for 20-30 minutes before carving.
  8. If desired, deglaze the pan with beef broth to make a sauce.

Notes

Letting the roast rest is key; this allows juices to redistribute throughout the meat. Use a meat thermometer for precise cooking.
