- 1 prime rib roast (about 5–7 pounds)
- Kosher salt
- Freshly ground black pepper
- 4–6 cloves of garlic, minced
- Fresh rosemary, chopped
- Fresh thyme, chopped
- Olive oil
- Beef broth (optional)
Instructions
- Preheat the oven to 450°F (232°C).
- Let the prime rib sit at room temperature for about 1 hour.
- Mix garlic, rosemary, thyme, olive oil, salt, and pepper to create a herb paste.
- Rub the herb paste all over the prime rib, coating thoroughly.
- Place the prime rib fat-side up in a roasting pan and roast for about 20-25 minutes.
- Reduce the temperature to 325°F (163°C) and roast for another 1.5 to 2 hours.
- Remove from oven and let it rest for 20-30 minutes before carving.
- If desired, deglaze the pan with beef broth to make a sauce.
Notes
Letting the roast rest is key; this allows juices to redistribute throughout the meat. Use a meat thermometer for precise cooking.
