- 1 pound beef stew meat, cubed
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cups beef broth
- 1 cup frozen peas
- 2 tablespoons flour
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 pie crusts
Instructions
- Preheat the oven to 425°F (220°C). In a large pot, brown the cubed beef over medium heat until nicely seared on all sides.
- Remove the beef and set it aside. In the same pot, add onions, carrots, and potatoes; sauté until softened, about 5–7 minutes.
- Sprinkle flour over the vegetables and stir well. Gradually pour in beef broth while stirring to avoid lumps. Bring to boil, season with thyme, salt, and pepper. Return beef; simmer for about 10 minutes. Mix in peas.
- Pour the mixture into a pie dish, cover with a pie crust, seal edges, and cut slits in the top. Bake for 30-35 minutes until the crust is golden brown.
Notes
Serve hot, paired with a green salad or buttery bread. Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
