- 4 large eggs
- 1 cup milk
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 loaf of bread (cut into bite-sized cubes)
- 1/4 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and generously grease a muffin tin with butter.
- Cut the loaf of bread into small cubes and set them aside. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, ground cinnamon, and salt.
- Add the bread cubes to the egg mixture, gently stirring to coat, and allow to sit for 10 minutes.
- In a small bowl, mix the sugar and ground cinnamon for the coating. Fill each muffin cup with the soaked bread mixture, pressing down slightly.
- Bake for 20-25 minutes, or until muffins are golden brown. Allow to cool for a few minutes before rolling in the cinnamon sugar mixture. Serve warm.
Notes
Use day-old bread for best texture. Customize with fruits, nuts, or chocolate chips.
