Description

Delightful muffins combining classic French toast flavors, perfect for busy mornings or brunch gatherings.

Ingredients

Scale
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 loaf of bread (cut into bite-sized cubes)
  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a muffin tin with butter.
  2. Cut the loaf of bread into small cubes and set them aside. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, ground cinnamon, and salt.
  3. Add the bread cubes to the egg mixture, gently stirring to coat, and allow to sit for 10 minutes.
  4. In a small bowl, mix the sugar and ground cinnamon for the coating. Fill each muffin cup with the soaked bread mixture, pressing down slightly.
  5. Bake for 20-25 minutes, or until muffins are golden brown. Allow to cool for a few minutes before rolling in the cinnamon sugar mixture. Serve warm.

Notes

Use day-old bread for best texture. Customize with fruits, nuts, or chocolate chips.
