- 4 cups day-old bread, cut into small cubes
- 4 large eggs
- 1 cup milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 1/4 cup melted butter
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- Cut the bread into small cubes and place them in a large mixing bowl.
- In a separate bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt. Pour this mixture over the bread cubes and gently stir to combine. Allow it to sit for 10 minutes.
- Divide the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Mix the brown sugar and an additional tablespoon of cinnamon; sprinkle over the top of each muffin, then drizzle with melted butter.
- Bake for 20-25 minutes, until golden brown. Cool for a few minutes before removing from the tin and dust with powdered sugar.
Notes
Use day-old bread for the best texture and don’t rush the soaking time for a moist muffin. Variations include adding fruits or nuts.
