Description

These delightful muffins capture the essence of classic cinnamon rolls while providing a satisfying protein punch, making them perfect for breakfast or a snack.


Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 egg
  • 1 tablespoon maple syrup
  • 1/4 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the oat flour, protein powder, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the applesauce, almond milk, egg, and maple syrup until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the nuts or chocolate chips if you are using them.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes
