Description

A delightful and nutritious twist on sweet cinnamon rolls, these muffins are protein-packed and perfect for breakfast or a snack.


Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup almond milk (or milk of choice)
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 tablespoons cinnamon
  • 1/4 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Mix together the whole wheat flour, protein powder, brown sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. Whisk together the almond milk, unsweetened applesauce, and vanilla extract in another bowl.
  4. Combine the wet and dry ingredients, stirring until just combined.
  5. Fold in walnuts or pecans if desired.
  6. Divide the batter evenly among the muffin liners, filling each about 2/3 full.
  7. Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter touch, drizzle with a light icing made of powdered sugar and milk after cooling.
