- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup almond milk (or milk of choice)
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 2 tablespoons cinnamon
- 1/4 cup walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- Mix together the whole wheat flour, protein powder, brown sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
- Whisk together the almond milk, unsweetened applesauce, and vanilla extract in another bowl.
- Combine the wet and dry ingredients, stirring until just combined.
- Fold in walnuts or pecans if desired.
- Divide the batter evenly among the muffin liners, filling each about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
For a sweeter touch, drizzle with a light icing made of powdered sugar and milk after cooling.
