Description

These muffins combine the beloved taste of cinnamon rolls with a nutritious protein boost, perfect for breakfast or a snack.


Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine oat flour, protein powder, baking powder, cinnamon, and salt in a large bowl.
  3. Mix together applesauce, almond milk, and maple syrup in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow the muffins to cool slightly in the tin before transferring them to a wire rack.
