- 1 teaspoon baking powder

- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1/2 cup brown sugar
- 1 cup powdered sugar
- 2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
- On a floured surface, roll out the dough into a large rectangle.
- For the filling, mix brown sugar and cinnamon in a small bowl, then spread it over the rolled dough.
- Roll up the dough tightly from the long side to form a log.
- Slice the rolled dough into cookies, about 1 inch thick.
- Place cookies on the baking sheet and bake for 10-12 minutes until golden around the edges.
- For the icing, combine powdered sugar and milk in a bowl until smooth, then drizzle over cooled cookies.
Notes
Store any leftover cookies in an airtight container at room temperature for up to 4 days. Freeze uncooked cookie dough for up to 3 months.
