Description

A delightful blend of rich chocolate flavor and nutritious zucchini, this moist loaf is perfect for any time of day.


Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the grated zucchini, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using chocolate chips, gently fold them in.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
