Description

A delightful dessert that combines rich chocolate flavors with tart fresh raspberries, finished with a smooth chocolate ganache.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh raspberries
  • 1/2 cup sugar (for raspberry compote)
  • 1 cup heavy cream (for ganache)
  • 8 ounces semi-sweet chocolate (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt; stir until incorporated.
  3. Add the eggs, milk, vegetable oil, and vanilla extract; mix on medium speed for about 2 minutes until smooth. Gradually stir in the boiling water and thin batter.
  4. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
  5. For the raspberry compote, combine raspberries and 1/2 cup sugar in a saucepan over medium heat; cook until thickened slightly, then cool.
  6. To prepare ganache, heat heavy cream in a small saucepan until simmering. Pour over chopped chocolate, let sit, and then stir until smooth; cool to room temperature.
  7. Once cakes are cool, place one layer on a plate, spread raspberry compote over it, and top with the second layer. Frost with ganache and decorate as desired.

Notes

For best results, use room temperature ingredients and high-quality chocolate. Can be made gluten-free with alternative flour.
