- 1 cup unsalted butter, softened
- 2/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup chocolate chips
- Red and green sprinkles (optional)
Instructions
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract and peppermint extract thoroughly.
- Gradually add the flour and salt, mixing until just combined; fold in chocolate chips.
- Divide the dough in half and shape into logs. Wrap in plastic wrap and refrigerate for at least 2 hours.
- Preheat oven to 350°F (175°C). Slice chilled logs into cookies and place on a parchment-lined baking sheet; sprinkle with sprinkles if desired.
- Bake for 10-12 minutes, until edges are lightly golden. Allow to cool on the baking sheet before transferring to a wire rack.
