Ingredients

- 1 cup almond flour
- 2 cups powdered sugar
- 1/4 cup cocoa powder
- 4 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1 cup dark chocolate (for ganache)
- 1/2 cup heavy cream (for ganache)
Instructions
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Sift together almond flour, powdered sugar, and cocoa powder in a bowl. In a separate bowl, beat egg whites until foamy. Gradually add granulated sugar while continuing to beat until stiff peaks form.
- Fold the sifted dry ingredients into the beaten egg whites, being careful not to deflate the mixture.
- Transfer the batter to a piping bag. Pipe small, even rounds onto the prepared baking sheet.
- Let the macarons sit for 30 minutes at room temperature to form a skin.
- Bake the macarons in the preheated oven for 15-20 minutes. Let them cool completely on the baking sheet.
- Heat the heavy cream in a saucepan over medium heat until it starts to simmer. Pour the hot cream over chopped dark chocolate and let it sit for a minute before stirring until smooth.
- Pair the cooled macarons by size, fill each pair with ganache, and sandwich them together.

Store in an airtight container in the refrigerator for up to five days or freeze for up to one month.
