Ingredients

- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/4 cup cocoa powder
- 1/2 cup dark chocolate (for ganache)
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Sift together the almond flour, powdered sugar, and cocoa powder in a bowl.
- Whip the egg whites until foamy, gradually add granulated sugar, and continue whipping until stiff peaks form (about 5-7 minutes).
- Fold the dry ingredients into the whipped egg whites in three additions.
- Pipe the mixture onto the prepared baking sheet in circles, about 1.5 inches in diameter, and let sit for 30 minutes.
- Bake for 15-20 minutes until the shells have a crisp outer layer.
- Heat heavy cream until simmering, then pour it over chopped dark chocolate and let sit before stirring until smooth.
- Pipe a dollop of ganache between two macaron shells to assemble.
Notes
Allow macarons to cool completely before removing from the baking sheet. Store in an airtight container in the refrigerator for up to 5 days.
