Description

A delightful treat that combines rich chocolate flavors with the moisture of zucchini, perfect for breakfast or as a snack.

Ingredients

Scale
  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until blended.
  3. In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring until combined. Gently fold in the chocolate chips.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For best results, ensure the zucchini is well-drained and consider adding nuts for texture.
