Description

This Chicken Mashed Potato Casserole is the perfect comfort food, blending savory chicken and creamy mashed potatoes into a hearty dish.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 4 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup cream of chicken soup
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked, shredded chicken, cream of chicken soup, milk, garlic powder, salt, and pepper. Stir until well mixed.
  3. Spread the chicken mixture evenly in a baking dish. Top it off with the mashed potatoes, smoothing them out. Sprinkle shredded cheddar cheese over the top.
  4. In a small bowl, mix breadcrumbs with melted butter and sprinkle over the cheese.
  5. Bake in the preheated oven for 30-35 minutes, until golden and bubbling. Allow to cool slightly before serving.

Notes

Leftover casserole can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
