- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons fajita seasoning
- 4 large tortillas
- 1 cup cooked rice
- 1 cup black beans, drained
- 1 cup corn
- 1 cup shredded cheese
- Sour cream, for serving
- Fresh cilantro, for garnish
Instructions
- In a skillet over medium heat, cook the sliced chicken until browned and cooked through, about 6-7 minutes.
- Add the sliced bell pepper and onion to the skillet, then sprinkle with fajita seasoning. Cook until the vegetables are tender, about 4-5 minutes, stirring frequently.
- In another skillet, lightly toast the tortillas over medium heat until they are pliable, about 1-2 minutes per side.
- To assemble, place a warm tortilla in a bowl and layer in the cooked rice, black beans, corn, and the chicken-vegetable mixture. Top with cheese, a dollop of sour cream, and garnish with fresh cilantro. Serve and enjoy!
