Description

A delightful dish combining a traditional meat sauce with wholesome spaghetti squash, perfect for a low-carb, nutrient-packed meal.


Ingredients

  • 1 medium spaghetti squash
  • 1 pound ground meat (beef, turkey, or sausage)
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle the cut sides with olive oil, sprinkle with salt and pepper, and place cut side down on a baking sheet to roast for 30-40 minutes.
  2. In a skillet over medium heat, add ground meat and cook until browned. Add minced garlic and dried Italian herbs, cooking for one more minute.
  3. Pour in marinara sauce and simmer for about 10 minutes.
  4. Use a fork to scrape out the squash strands and combine with the meat sauce. Transfer to a baking dish, top with mozzarella, and bake for an additional 10-15 minutes until cheese is bubbly and golden. Garnish with parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat as needed. You can also freeze individual portions for longer storage.
