- 1 medium spaghetti squash
- 1 pound ground meat (beef, turkey, or sausage)
- 2 cups marinara sauce
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle the cut sides with olive oil, sprinkle with salt and pepper, and place cut side down on a baking sheet to roast for 30-40 minutes.
- In a skillet over medium heat, add ground meat and cook until browned. Add minced garlic and dried Italian herbs, cooking for one more minute.
- Pour in marinara sauce and simmer for about 10 minutes.
- Use a fork to scrape out the squash strands and combine with the meat sauce. Transfer to a baking dish, top with mozzarella, and bake for an additional 10-15 minutes until cheese is bubbly and golden. Garnish with parsley before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat as needed. You can also freeze individual portions for longer storage.
