- 2 cups cooked chicken, shredded
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 cup shredded cheese (cheddar or your choice)
- 1 can cream of chicken soup
- 1 onion, chopped
- 1 cup frozen peas and carrots
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
Instructions
- Preheat the oven to 350°F (175°C). Gather all your ingredients in one place.
- In a large mixing bowl, combine the chicken, rice, chicken broth, cream of chicken soup, onion, peas and carrots, garlic powder, paprika, salt, and pepper. Stir until well combined.
- Pour the mixture into a greased casserole dish. Cover with aluminum foil and bake for 45 minutes.
- Remove the foil, sprinkle cheese on top, and bake for an additional 15 minutes until the cheese is melted and bubbly. Let cool slightly before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can freeze for up to 2 months.
