Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Add the cubed potatoes and pour in the chicken or vegetable broth. Increase the heat and bring to a gentle boil, then reduce to a simmer. Cook until the potatoes are fork-tender, about 15-20 minutes.
- Blend the soup to your desired smoothness using an immersion blender or a standard blender, then return to the pot if needed.
- Stir in the heavy cream, shredded cheddar cheese, dried thyme, salt, and pepper. Heat gently until the cheese is melted and the soup is warmed throughout.

Notes
