Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
- Whisk together the flour, baking soda, baking powder, salt, cinnamon, and ginger in a bowl until well combined.
- Cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract into the creamed mixture until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined to avoid overmixing.
- Fold in the grated carrots, chopped nuts, and optional raisins until evenly distributed throughout the dough.
- Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Serve warm with a light dusting of powdered sugar or a drizzle of cream cheese glaze for an indulgent treat. Store in an airtight container at room temperature for 4-5 days or freeze for up to 3 months.
