- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 4 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 4 large eggs
- 1 tsp vanilla extract
- 2 cups diced apples (such as Granny Smith and Honeycrisp)
- 1 tsp ground cinnamon
- Caramel sauce for drizzling
Instructions
- Preheat your oven to 325°F (165°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat together softened cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, then fold in diced apples and cinnamon.
- Pour the filling over the prepared crust and bake for 60-70 minutes, until edges are set.
- Turn off the oven and let the cheesecake cool inside for an additional hour.
- Remove from the oven and let cool completely before drizzling with caramel sauce.
Notes
Letting the cheesecake cool gradually in the oven helps prevent cracking. For a different flavor, try mixing in lemon juice with the apples.
