Description

A rich and creamy cheesecake infused with sweet apples and topped with a decadent caramel drizzle.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 cups diced apples (such as Granny Smith and Honeycrisp)
  • 1 tsp ground cinnamon
  • Caramel sauce for drizzling

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat together softened cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, then fold in diced apples and cinnamon.
  4. Pour the filling over the prepared crust and bake for 60-70 minutes, until edges are set.
  5. Turn off the oven and let the cheesecake cool inside for an additional hour.
  6. Remove from the oven and let cool completely before drizzling with caramel sauce.

Notes

Letting the cheesecake cool gradually in the oven helps prevent cracking. For a different flavor, try mixing in lemon juice with the apples.
