- 4 medium sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup butter
- 1/2 cup water
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C). Peel and slice the sweet potatoes into rounds, about 1/2 inch thick.
- In a large pot, combine the brown sugar, butter, water, and a pinch of salt. Heat over medium heat until the butter melts.
- Add the sliced sweet potatoes to the pot and stir well to coat in the sugary mix. Bring to a gentle simmer.
- Transfer the sweet potatoes to a baking dish, drizzle with vanilla extract, sprinkle with cinnamon, cover with foil and bake for 30 minutes. Remove the cover and bake for an additional 15 minutes until tender and glazed.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm in the oven at a low temperature.
