Delicious roll-ups combining creamy ricotta, tender butternut squash, and marinara sauce for a comforting meal.
Ingredients
- Lasagna noodles
- Butternut squash (peeled and cubed)
- Ricotta cheese
- Mozzarella cheese (shredded)
- Parmesan cheese (grated)
- Spinach (fresh or frozen)
- Garlic (minced)
- Olive oil
- Salt
- Pepper
- Nutmeg
- Marinara sauce
Instructions
- Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente, then drain them and set aside.
- In a skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and cook until fragrant, about one minute. Next, add the cubed butternut squash and spinach to the skillet. Sauté until the squash is tender, around 8-10 minutes. Season with salt, pepper, and a pinch of nutmeg.
- In a large mixing bowl, combine the ricotta cheese with half of the grated Parmesan. Season with salt and pepper to taste, creating a smooth mixture.
- Spread a thin layer of marinara sauce on the bottom of a baking dish. For each cooked lasagna noodle, spread a layer of the ricotta mixture, followed by the butternut squash and spinach mixture. Sprinkle some shredded mozzarella on top and roll up the noodle, placing it seam-side down in the baking dish.
- Once all roll-ups are in the dish, pour the remaining marinara sauce over them. Top with remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and continue baking for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Let cool for a few minutes before serving.
Notes
These roll-ups can be made a day in advance and are great for leftovers. They pair well with garlic bread or a fresh green salad.
