Ingredients

- 110g butter
- 110g sugar
- 2 large eggs
- 110g self-raising flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 75g whipped cream
- Fresh fruit or jam for filling
- Icing sugar for dusting
Instructions
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper cases.
- Cream together the butter and sugar until light and fluffy (3-5 minutes).
- Add the eggs one at a time, mixing well after each addition. Sift in the flour and baking powder, add the vanilla extract, and mix until just combined.
- Spoon the mixture into the prepared cases, filling them about two-thirds full. Bake for 15-20 minutes until golden brown and a skewer comes out clean. Let them cool.
- Once cool, cut a small circle from the top of each cake, scoop out some inside, fill with whipped cream, top with fruit or jam, and replace the tops at an angle to mimic wings. Dust with icing sugar before serving.
Notes
For extra flavor, add a splash of almond extract or lemon zest. Store in an airtight container for up to 2 days at room temperature, or refrigerate for up to a week.
