- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 cup milk
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C). Prepare a muffin tin by greasing it or lining it with paper liners.
- In a large mixing bowl, combine the flour, sugar, salt, and baking powder. Whisk together until well mixed.
- In a separate bowl, whisk together the milk, oil, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Carefully fold in the blueberries.
- Divide the muffin batter evenly among the prepared muffin cups, filling each about two-thirds full. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Remove the muffins from the oven and allow to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
Serve warm with butter or honey. Store in an airtight container for up to 3 days or freeze for 2-3 months.
