- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp salt
- 2 tsp baking powder
- 1 cup milk
- 1/2 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 2 cups fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C). Prepare a muffin tin by greasing it or lining it with paper liners.
- In a large bowl, combine all-purpose flour, sugar, salt, and baking powder; whisk together.
- In a separate bowl, whisk milk, oil, egg, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients; stir gently until just combined and fold in blueberries.
- Divide the batter among muffin cups, filling each two-thirds full and bake for 20-25 minutes until a toothpick comes out clean.
- Once baked, allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
Notes
Serve warm with butter or honey. Store in an airtight container for up to 3 days or freeze for 2-3 months.
