Description

Whimsical homemade cookies capturing the flavors of Brown Sugar Pop Tarts with a sweet, buttery crust and delightful frosting filling.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup frosting (for filling)
  • Sprinkles (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the brown sugar and softened butter until smooth and fluffy. Beat in the egg and vanilla extract.
  3. Combine the all-purpose flour, baking powder, and salt in another bowl. Gradually add this mixture to the creamed ingredients, stirring until a dough forms.
  4. Roll out the dough on a floured surface to about 1/4 inch thick. Cut it into squares. On half of the squares, place a small amount of frosting in the center. Top with another square and seal the edges with a fork.
  5. Place the cookies on a baking sheet and bake for 12-15 minutes or until lightly golden.
  6. Allow the cookies to cool on a wire rack and decorate with colorful sprinkles.

Notes

Serve with milk or coffee. Can be frozen for up to 3 months.
