- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup powdered sugar
- 2 tablespoons milk
- Food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract until fully incorporated.
- Gradually mix in the flour and salt until the dough is well combined. Roll out the dough between two sheets of parchment paper to about 1/4 inch thick, then cut the dough into rectangles. Place half of the rectangles on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until lightly golden, then let them cool.
- While the cookies cool, mix the powdered sugar and milk to create a glaze. If desired, add a few drops of food coloring to brighten it up. Once the cookies are cool, spread glaze on each cookie and top with another rectangle to form a sandwich. Allow the glaze to set before serving.
Notes
For an even chewier texture, slightly underbake the cookies. Feel free to experiment with different extracts for unique flavor profiles.
