- 1 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup pure maple syrup
- 1 cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan, brown the butter over medium heat until golden and nutty (5-7 minutes).
- In a mixing bowl, combine the brown butter, brown sugar, and granulated sugar until creamy, then add the maple syrup, pumpkin puree, egg, and vanilla extract, mixing until smooth.
- In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt. Gradually combine with the wet ingredients.
- Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, leaving space between them.
- Bake for 10-12 minutes until the edges are set but the centers are soft.
- Allow to cool on the baking sheet for a few minutes before transferring to wire racks.

Best enjoyed warm. Store in an airtight container for up to five days or freeze for up to three months.
