Instructions
- Preheat the oven to 350°F (175°C).
- Melt the butter over medium heat until browned.
- Combine brown butter, brown sugar, and granulated sugar in a bowl.
- Add eggs and vanilla extract, stirring until smooth.
- Whisk together flour, baking soda, and salt in a separate bowl.
- Gradually mix the dry ingredients into the wet ingredients.
- Fold in toffee bits, chocolate chips, and brewed coffee.
- Drop spoonfuls of dough onto a lined baking sheet.
- Bake for 10-12 minutes until edges are golden brown.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a softer cookie, underbake slightly and cool on the sheet. Store in an airtight container for up to a week.
