Description

Ingredients

  • 1 cup fresh or frozen blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix.
  5. Gently fold in the blueberries to the batter, ensuring they are evenly distributed.
  6. Fill each muffin cup about 2/3 full with the batter, leaving room for the muffins to rise.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
