- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup cold butter, cubed
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease or line an 8×8 inch baking pan with parchment paper for easy removal.
- In a large bowl, combine the flour, rolled oats, brown sugar, and salt. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Press half of this mixture into the bottom of the prepared pan to form the base. In another bowl, mix the fresh blueberries, granulated sugar, lemon juice, vanilla extract, and cinnamon together. Pour this blueberry mixture over the crust you just made. Sprinkle the remaining crumble mixture on top of the blueberries.
- Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the blueberries are bubbling. Allow the bars to cool in the pan before cutting them into squares.
Notes
For added texture, consider mixing in nuts or shredded coconut into the crumble. Let them cool completely for cleaner cuts when slicing.
