Description

Delightful and flaky biscuits filled with a creamy blueberry mix, perfect for breakfast or afternoon tea.


Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • Refrigerated biscuit dough (as per package instructions)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven according to the biscuit package instructions.
  2. Combine the blueberries, heavy cream, sugar, vanilla extract, and cornstarch in a medium bowl. Mash slightly.
  3. Open the package of refrigerated biscuits and gently flatten each biscuit to about 1/4 inch thick.
  4. Add a spoonful of the blueberry cream mixture into the center of each biscuit, then fold and seal.
  5. Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
  6. Dust with powdered sugar before serving.

Notes

Best served warm with whipped cream or lemon curd. Can be made ahead and stored in the fridge for up to 3 days.
