- 1 cup fresh blueberries
- 1/2 cup heavy cream
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- Refrigerated biscuit dough (as per package instructions)
- Powdered sugar for dusting
Instructions
- Preheat your oven according to the biscuit package instructions.
- Combine the blueberries, heavy cream, sugar, vanilla extract, and cornstarch in a medium bowl. Mash slightly.
- Open the package of refrigerated biscuits and gently flatten each biscuit to about 1/4 inch thick.
- Add a spoonful of the blueberry cream mixture into the center of each biscuit, then fold and seal.
- Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
- Dust with powdered sugar before serving.
Notes
Best served warm with whipped cream or lemon curd. Can be made ahead and stored in the fridge for up to 3 days.
