Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold, cubed unsalted butter
  • 3/4 cup milk
  • 2 cups fresh blackberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1/2 cup water

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix the flour, baking powder, and salt. Add the cold butter and blend until it resembles coarse crumbs.
  3. Add the milk and stir gently until just combined.
  4. Turn the dough onto a floured surface, knead gently, and roll out to 1-inch thick. Cut with a round cutter and place on a baking sheet.
  5. Bake for 15-20 minutes until golden brown.
  6. For the blackberry soup, combine blackberries, sugar, lemon juice, and water in a saucepan. Cook over medium heat until soft.
  7. Strain if desired, and heat until warm.
  8. Serve biscuits with blackberry soup ladled over the top.

Notes

Use chilled butter for flaky biscuits and avoid overmixing the dough.
