- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup cold, cubed unsalted butter
- 3/4 cup milk
- 2 cups fresh blackberries
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1/2 cup water
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, mix the flour, baking powder, and salt. Add the cold butter and blend until it resembles coarse crumbs.
- Add the milk and stir gently until just combined.
- Turn the dough onto a floured surface, knead gently, and roll out to 1-inch thick. Cut with a round cutter and place on a baking sheet.
- Bake for 15-20 minutes until golden brown.
- For the blackberry soup, combine blackberries, sugar, lemon juice, and water in a saucepan. Cook over medium heat until soft.
- Strain if desired, and heat until warm.
- Serve biscuits with blackberry soup ladled over the top.
Notes
Use chilled butter for flaky biscuits and avoid overmixing the dough.
